Paul, originally from Edinburgh, and Donna, from Hartlepool, are a dynamic couple with a passion for travel, renovation, and breathing new life into forgotten historical buildings. With backgrounds in commercial leadership and property consultancy, they have lived and worked across the UK, Middle East, Thailand, and France. Their journey into chateau restoration began in 2018 with the purchase of Chateau de Sauge in the Deux-Sèvres region.

Welcome to Moulin du Couesnon

Nestled on its very own island between two 12th-century bridges, Moulin du Couesnon is a 13th-century water mill undergoing an extraordinary transformation. Once abandoned and forgotten, this historic mill is now in the loving hands of Paul and Donna, a globe-trotting couple with a passion for bringing old buildings back to life.

The couple was immediately captivated by the charm and history of the water mill. Even in its derelict state, full of old milling equipment, the mill exuded potential. Loved by locals and steeped in regional heritage, it deserved to be restored and reimagined for the future.

Having sat empty for over 40 years, the mill required extensive renovation. From new roofs and windows to utilities and waste systems, Paul and Donna are tackling every inch of the restoration themselves, working tirelessly and passionately to turn the property into their forever home.

Life Before the Mill

Prior to Moulin du Couesnon, Paul and Donna spent five years restoring Chateau de Sauge. Before their chateau adventures, they lived in Thailand and spent over a decade working across the Middle East, gathering experiences that now inform their ambitious projects in France.

Life in Brittany

Although much of their time is dedicated to the mill’s restoration, Paul and Donna relish exploring the beautiful towns and coastlines of Brittany and Normandy. Surrounded by incredible scenery, welcoming locals, and delicious cuisine, they felt at home from the start.

Family, Friends & Support

While another massive renovation project initially raised eyebrows among family and friends, those close to Paul and Donna know this is their passion. They’ve received overwhelming support from their large online following and from people who stop by the mill to offer encouragement and say hello.

Challenges & Advice for Chateau Dreamers

The biggest hurdle they’ve faced is the language barrier. Though living in France for six years, fluency is still a work in progress. Despite this, they manage well and continue to learn.

Their advice? Be realistic. Know what you want from a property, understand the costs, and have a solid plan. Most importantly, make sure you can work together under pressure—renovating a chateau is not for the faint-hearted.

Future Vision

The journey is far from over. Aside from restoring the mill itself, Paul and Donna plan to develop the surrounding land, including a silo they hope to convert into a unique three- or four-bedroom home. Their dream includes hosting unforgettable gatherings for friends and family in a space filled with character and history.

Strategic location

Moulin du Couesnon boasts a rich history—once the only river crossing in the area, it has been a strategic site for centuries. The couple aims to preserve its industrial roots while giving it an eclectic, comfortable atmosphere.

Restoration & DIY

Moulin du Couesnon is a renovation on a grand scale. Clearing 29 abandoned vehicles, a boat, and a caravan was just the beginning. They’ve tackled huge demolition jobs, added over 50 windows and 10 doors, and still have many months of work ahead.

Every design decision is inspired by the building itself. It’s about honouring the history while making it liveable. They do nearly all the work themselves, leaning on creative DIY hacks and the occasional helping hand from friends.

Their top tips? Use piping bags for mortar. Shop smart—materials vary massively in cost. And above all, have a solid plan.
